Endless Possabilities

Last week we made Greek, Thai, and European Cuisine. All in the same night! I love discovering new foods. It is a passion of mine. Every month my husband and I try to think of something new to try. Then we look up hundreds of recipes, decide on a few and make up our own version. Usually I create alone ( i am a bit of a control freak in the kitchen) but with these new recipes there are no rules and it is easier for me to just go with the flow! Now we may not hit the ball outta the park every time but even when it is awful we still enjoy it. It is a new tradition but one that is bringing us a lot of joy.

Give it a try and I pray it will give you as much joy as it does us.

I'll keep you posted on the delicious successes, and even fill you in on our hilarious failures along with my new day to day creations.

Tomato and Mushroom Bruschetta

6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Directions
1.Preheat the oven on broiler setting.
2.In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3.Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4.Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5.Broil for 5 minutes, or until the cheese is melted.

Eat while there still warm for best taste!!


Heavenly Pineapple Fried Rice

•1 cup pineapple tidbits
•4 cups cooked rice, preferably at least 1 day old
•4 Tbsp oil for stir-frying
•2 shallots, thinly sliced
•3 cloves garlic, minced
•1 red or green chili (de-seeded if milder rice is desired)
•1/2 cup roasted unsalted cashews
•1/2 cup frozen peas
•1 egg, beaten (omit if vegan)
•1/4 cup currants (or raisins I used raisens)
•3 Tbsp. chicken or vegetable stock
•3 Tbsp.soy sauce
•2 tsp. curry powder
•1 tsp. sugar
•3 spring onions, finely sliced

Put 1 Tbsp oil and all ingredients except rice and pineapple into a skillet fry 5 to 7 min on medium heat.

Then add the rest of the oil, rice and pineapple. Simmer 7 to 10 min stirring frequently.

Let cool and enjoy!!

Shepherds Pie

This recipe is my fav. It was my third attempt to make it and I finally came up with a recipe that I was pleased with. It is good without mushrooms as well!




What you will need....

-Spices-


Onion powder
Garlic powder
Seasoned meat tenderizer
Parsley flakes
Mrs Dash (Original)



-Main Ingredients-
1lB Ground Chuck or Ground Turkey
1 Onion Diced
1 Can mushrooms
1 Can mixed vegatables
1/2 Can beef broth
2 Packs of inst Mashed potatoes (I use butter and herb or cheddar flavored)
1 Tbs Butter or some Non Stick cooking spray
+
Milk, Butter, and Water (for inst, mashed potatoes)


First you brown the ground meat with the meat tenderizer, onion powder, garlic powder and parsley ( lightly season)
After the meat is browned drain the mushrooms and add the diced onion and mushrooms fry on medium heat until onions begin to caramelize.
Next you add the veggies, 4 oz of beef broth, and about a tsp of Mrs Dash let that simmer about 7 to 10 min.
While it simmers prepare the mashed potatoed. (It only takes about 5 min in the microwave)
Then put meat and veggies in a casserole dish add the rest of beef broth and spoon mashed potatoes on top.
Put under broiler until potatoes are Golden brown. Let cool.
Then enjoy!!!
