Breakfast was awesome, A Quiche, of egg, onions, mushrooms, bacon bits, green pepper, topped with tomato's!!
Lunch was a baked P,B, & J pastry type thing that I haven't thought of a name for yet. But it was delicious!
Dinner, Beef Pasta with Peas, Fruit Salad, & Pumpkin Pecan Cake!
Beef Pasta.....
What you will need
1Lb egg noodles
Beef broth (enough to boil your noodles in apx 4 cans)
Seasoning( salt & pepper to taste)
1 tsp parsley flakes
1 cup cooked beef (I used leftover T-Bones but beef roast or even hamburger works)
2 cans sweet peas (drained)
1 jar beef gravy
Step 1-
Bring broth to a boil, add in noodles, peas & parsley. Continue to boil until noodles are cooked.Then drain.
Step 2-
Combine beef, noodle pea mixture & gravy in mixing bowl.
Step 3-
Mix well and enjoy.

Easy Chicken Enchiladas
Filling
2 c Chicken (cooked)
16 oz Cream Cheese
1 c Mexican Rice
2 oz Green Chillies
Topping
1 c Salsa
1 c Sour Cream
2 c Mild Cheddar Cheese
12 Flour Tortillas
Tomatoes and Lettuce
for garnish!!
Preheat oven to 350
Mix all filling ingredients in large mixing bowl, mix well
Place filling on center of tortilla and roll, then place in baking dish.
When you have rolled them all dump sour cream, and cheese on top and place in the oven for 22 to 25 minutes
Let them cool for 5 min then add salsa, tomatoes, and lettuce.
Fried Corn
This is easy.
You need
1 Bag Frozen Broccoli (cooked)
16oz Reduced Fat Sour Cream (softened)
2 Boneless Skinless Chicken Breasts (boiled & chopped)
1 Cup Shredded Cheese
1 1/2 Cups Ranch Dressing
1 Medium Onion (diced)
1 Ready to Bake Pie Crust
Step 1-
In large mixing bowl combine chicken, ranch dressing, onion, cheese and sour cream mix well. Pre heat oven to 350
Step 2-
Gently fold broccoli into the mix. If you prefer your broccili mashed stir as usual.
Step 3-
Brush EVOO onto pie pan (i always use glass) and place crust in pan.
Step 4-
Place mixture into crust. You can make this pie with or without a top crust.
Step 5-
Bake until crust is golden brown. Usually apx 20min. Cool and enjoy

Endless Possabilities
Last week we made Greek, Thai, and European Cuisine. All in the same night! I love discovering new foods. It is a passion of mine. Every month my husband and I try to think of something new to try. Then we look up hundreds of recipes, decide on a few and make up our own version. Usually I create alone ( i am a bit of a control freak in the kitchen) but with these new recipes there are no rules and it is easier for me to just go with the flow! Now we may not hit the ball outta the park every time but even when it is awful we still enjoy it. It is a new tradition but one that is bringing us a lot of joy.
Give it a try and I pray it will give you as much joy as it does us.
I'll keep you posted on the delicious successes, and even fill you in on our hilarious failures along with my new day to day creations.
